The only restaurant in Seoul serving heugu, Jeju's native black cattle, raised on a farm Boreumsae runs on the island itself.
The beef is flown up fresh and dry-aged around 2,000 hours.
It is leaner and firmer than hanwoo and tastes nuttier for it, which is why the kitchen sends it out with nothing but salt.
One Michelin star in the inaugural Seoul guide in 2017, and selected for nine consecutive years since.
